  蜂蜜是蜜蜂采集植物的花蜜、分泌物或蜜露,与自身分泌物混合后,经充分酿造而成的天然甜味物质。已有研究表明,蜂蜜中含有多种游离氨基酸,其中以脯氨酸的含量最高,而且是一种独特的氨基酸,授粉昆虫具有品尝这种氨基酸的能力,蜂蜜中的脯氨酸含量还与其抗氧化能力有关。因此,蜂蜜中脯氨酸的含量不仅被作为衡量蜂蜜中游离氨基酸含量的标准,也被作为蜂蜜成熟度和糖掺假的判定标准,纯正蜂蜜脯氨酸含量不应低于180m g/ kg。
